Hey folks! (Hopefully you get the pop music reference.) I thought I would take a few minutes to share my super-simple beet snack recipe.
My family loves these beets and it’s such an easy thing to make, I thought I would share. They are a great, healthy snack, or a great addition to a summer salad.
Give the recipe below a try and let me know what you think.
- Three medium sized beets, or two large ones.
- 2 tablespoons apple cider vinegar
- Salt and cracked black pepper to taste
Wash beets and then roast covered with foil at 375 degrees (Fahrenheit) until they are fork tender. Let beets cool a little and then peel skin with a butter knife. Cut beets in one inch cubes. Add apple cider vinegar, salt and black pepper. Eat warm, or place in refrigerator and eat cold. And, don’t forget the beet greens. Wash and have as part of salad topped with beets, or saute.
